It's "Chibap" time!

Fried rice with tempura fried chicken and scrambled eggs.

Also known as 'Chi-bap'.

Chi (chicken) and bap (rice in Korean).

I'm hoping I got it right.

There are 3 elements to the dish

  • Fried rice

  • Tempura fried chicken

  • Scrambled eggs


Recipe & instructions

Rice: There are 2 types of rice that you use

  • Sushi rice You can find this in any Asian grocery stores, Walmart or No-frills

  • Basmati rice I used basmati rice because most of my friends enjoy that specific type of rice. To be honest it was a huge task for me to replace it. I have never tried it before and was terrified about how it will turn out to be. Luckily, it was a hit.

  • 200 grams of rice

  • 2 ½ cups of water

  • 2 tablespoons of White vinegar

  • 1 ½ tablespoon of Sugar

  • ½ teaspoon of Salt

  • 1 thinly sliced Onion

  • 4 Spring onions chopped

  • 1 Garlic finely chopped

  • 2 tablespoons of Soy sauce

  1. Mix the ingredients thoroughly and put it on a medium flame until it cooks thoroughly. It must be softer than the regular rice.

  2. If you are using the Sushi rice, it naturally stickier than the normal rice and you can use the same amount of other ingredients listed above.

  3. Add oil to a large pan and put sliced onions, garlic, and spring onions to it and sauté it well.

  4. Now add your cooked rice into the pan with Soy sauce and mix it well.

  5. Mix until cooked thoroughly. Set it aside.


Tempura Fried Chicken:

  • 1lb Boneless chicken thigh / Chicken breast (Sliced 3inches long)

  • 1 tablespoon of pepper

  • ½ tablespoon of Garlic powder

  • ½ tablespoon of Onion powder

  • 1 teaspoon of salt

  • ½ cup of milk

  • 1 tablespoon of lemon juice

Mix ALL the ingredients thoroughly and set it aside for 20-30 mins.


Crumb Coating

  • ½ Tempura Powder

  • ½ Corn flour

  • ½ tablespoon of garlic powder

  • 1 teaspoon of Paprika/Chili powder (optional)

  1. Take a deep pan and add oil for deep frying.

  2. Add the marinated chicken into the dry mix and make sure it is coated well.

  3. Now drop the pieces one by one gently into the hot oil.

  4. Cook until it golden brown. Split it into half to see if it is completely cooked on the inside.

  5. Chop the pieces and set it aside.


Scrambled eggs:

  1. 4 eggs

  2. Salt to taste.


Plating:

  1. Add the cooked rice into a bowl.

  2. Add scrambled eggs to one side and crispy chicken on the other.

  3. Now add mayonnaise on top and dig in!
